Last night I beat my first staff ghost racing on Peach Gardens, I think all the playing mission mode helped me when it came to judicious mushroom use. These are my best times so far (with unlocked staff ghost times in parentheses), so far I have unlocked eighteen staff ghosts and beaten only one:
